Next, I deleted the pin, and opened a new Edge instance. That changed the taskbar right-click pop-up, but not the taskbar icon. However, whatever source was used when you first pinned it to the taskbar remains in place for the taskbar icon, regardless of any subsequent updates for Edge. Initially the taskbar icon was set to use %USERPROFILE%\AppData\Local\Microsoft\Edge Dev\User Data\Default\Edge Profile.ico but in later builds that changed to using the. I think it depends on how far back you originally pinned Edge to the taskbar.
